Red oak acorns overwinter on the forest floor before germinating in spring while white oak acorns germinate in the fall season that they drop. Acorns are a critical mast crop for squirrels, turkeys, and deer and those white oak acorns are lower in tannins and eaten immediately. Red oak acorns are bitter due to their high tannins that dissipate over time, therefore, squirrels cache them for later. The ones that survive the winter crack open in spring, sending down a first root before anything appears above the leaf litter.
